The “Burgundification” of Chablis

So, obviously, Chablis is in Burgundy but prices for the entry level wines were always in the more affordable range. Raveneau Basic Chablis is now $250 Vincent Dauvissat Basic Chablis is now $100

Prices for the top producers are now in line with Bourgogne Blancs from the top producers in the Cote d’Or.

I’ve always said that our young Fabien Dauvissat was nipping at the heels of the top 2 producers. After 2021, he’s now in the thick of it as one of the top 3.

Today, I’m selling basically a lieu dit (a level up from entry level Chablis) for under $30. This is one third oft he price of Vincent Davuvissat. The value delta is so great, I had to make it white wine of the year.

The Wine
The 2022 Jean Dauvisst Pere & Fils Chablis “Bas de Fourchaume” our first ever Chablis that will be our White Wine of The Year.

It is $29.99 on a 4-pack and $28.99 on a 12 bottle case. 

The site is called “Bas de Fourchaume” and is located, as its name indicates, under the Premier Cru Fourchaume. Classified in the Chablis appellation, this lower slope has the same south-southwest exposure as the Premier Cru, with a deeper clay-silt soil. The vine average 32 years of age and it is a .26 hectare parcel.

This has a roundness to it that is the trademark of its bigger brother but also on a bed of minerality that is intermingled throughout.

idgian with lovely aromatic purity. Huge classic Chablis nose of seashells, ocean air, mineral richness, some creamed corn, green apple skins, wer earth, tree bark, wet stones and so much breadth and pungency. Unreal clarity here that is just stunning. Nose is gorgeous with the most refined sea air. Like a perfume of sea air. Green apples just ripe. Just stunning.

Palate is elegantly ripe and rich. Such focus, grip and structure. but then immediately finishes with a massive crescendo of minerality that explodes into a long complex finish. Fabien leveled up in 2021 big time. Wow. Wow. Now after air this has gotten even more refined. Absurdly concentrated and juicy that one sip lasts minutes. Wait out each sip and this becomes a peak experience. But you’ll take plenty of sips before those minutes are up. It is just absurdly complex, ripe yet soothingly mineral with terrific, engaging and salty acids. It is compact and so long. That mineral drive is extremely apparent and vivid in this wine Palate is electric with just incredible acidity, focus and complexity. It’s a mineral bomb basically. So dense and complex. Just ridiculous wine.
