Your New House Champagne
You Know the the story…
In 2017, Marie Demets hired a consulting oenologist and the changes started to happen at a rapid pace. This is now one of the most exciting houses in Champagne. Yet, prices are still affordable.
– Yields were cut
– dosage was lowered tremendously
– single plot Champagnes were bottled
– newer, modern labels were created
– they age the wines on the lees for much longer (18 months for the regular cuvees)
– they made a (brilliant Pinot Blanc)
– most of the wines are now allocated
The bad news…
I only have 60 bottles but I need all of the Champagne lovers to try this because I will have more in future years and given the price and quality, this will be a case purchase consideration for a “House Champagne” starting next year.
Sparkling Pinot Blanc – The Very Important Thing Even Most Bubbles Experts Know Nothing About
Today is another new limited Marie Demets Champagne and perhaps it was the most revelatory Champagne at the tasting and the most revelatory and unique Champagne we sell. In the Cotes de Bar they do have a specialty that they don’t have up north and that is sparkling Pinot Blanc. Famously that’s how the very allocated and very expensive Cedric Bouchard made his name with his Pinot Blanc bottlings under the Roses de Jeanne line.
The Wine
Todays wine is under the basic line of Demets but it’s far far from a basis wine. I gave this wine a 9.5 and it’s by far the best non tete de cuvee Pinot Blanc Champagne I have ever had. It blew me away. In only have 60 bottles but production will be ramped up and I’ll be getting more in future years. The 2019 Marie Demets Singularite Pinot Blanc Extra Brut can be had for $42.99 a bottle on a 3-pack.
The plot this is from is called Frionnes. It’s all from 2019 with 1.5 grams of dosage.
The nose has a stunning vanilla quality that is super mineral with tons of vanilla extract, herbs and sweet spices. It also has red apple white flowers, crisp gala apples, vivid honey, dripping wet stones and crushed wild mint. After some coaxing chalk and gorgeous pineapple add so much complexity. The nose is vivid, detailed, layered and complex.
The palate is so complex yet serene and gentle, juicy and round with such purity, wonderful freshness acidity and fine fine mousse. Man this is so fresh and mineral, juicy and clean and has that pinot blanc roundness. Amazing mousse that is so fine, so balanced, so pure and so fresh. So saline and intense and so geeky. Sappy and intense with so much extract and density backed up by fine fine mousse and finesse. This is a stunning Champagne that drinks like $100 easy and can compete with the top bottlings of Cedric Bouchard and
Midjourney
As you know, we believe that strict recitations of tasting notes is only part of the story of a wine. We’ve always tried to include metaphors to try to give our readers a better understanding of how wines impact us. These metaphors have included architecture, painting, music and poetry.
We’re trying something new to help create visual metaphors using Midjourney, a generative artificial intelligence program that is by far the best image gneratour out there. I’ve messed around with a bunch and this is by far the best. We look forward to hearing your feedback.

OFFICE HOURS 4-7 PM
I love drinking and selecting wines – but my passion for teaching people about wine is almost as big. I’m happy to announce a block of time each day where people can call me just to chat about wine in general. These blocks are NOT intended to sell wine (I do that all day). This is to talk to me about wine pairings or great producers or how long to age wines or styles of wine making or the latest wine controversy. My goal is to help people learn more about wine and enjoy it more. Call me at 917-912-4355 from 4-7EST Monday – Friday.

A Word about Fass Selections and Social Media I am big into certain social media and I want people to take pictures of the wines they have received or will receive and tag me in them and share their thoughts. I a am on Instagram. Please tag me there. I also am on Delectable which I love a lot. It is Iphone/Ipad only, but it’s like Instagram meets Facebook for wine. Tag me there and find me there as well. I want to know if you liked the wine, were not moved by the wine, hated the wine or the wine gave you a religious experience. I want to know it all. Feedback is key and I will answer all feedback e-mails as quickly as I can. For all billing and invoicing inquiries please contact Rick at accounts@fassselections.com or 919-396-9876 |
