It has some discreet barrique aging but Max is a genius with framing use of wood that it is utterly brilliant and a distinct part of the wine like wood is on a great white burgundy.

It is basket pressed with a long fermentation using ambient yeasts and then aged in traditional casks before blending post fermentation.

There are no botryized grapes and then it is stored for 6 years and 3 months in wood casks before it is bottled.

I very much like the textured mouthfeel of the slightly bigger and richer medium-bodied flavors that coat the palate with sappy dry extract while exhibit good length on the serious, complex and lingering finale. There is presently a hint of backend dryness, but I would expect it to gradually dissipate with age.

Its typically a cooler site and 2019 works so well here.

It has silky tannins that remind me of high end Chambolle or Volnay. The color is always a deep violet and its full bodied and tannic when young. But with age it gets incredible. The terroir comes through. That Alpine sensibility.

After much air and even after 24 hours a wild fruit component starts to express itself. Guava and pineapple that is just mindblowing with all the yeast and minerals. Great contrast. It is a blend of 50% Chardonnay, 39% Pinot Noir and 11% Pinot Meunièr

But it draws you in with its terrific precision, depth and complexity. For me this is a unicorn as its very hard to find Brut Nature this good at this price. Almost impossible.

There is also an explosion of fruit on the mid palate that delivers on the nuanced fruit/mineral finish. Almost sappy. Deep, crunchy and loaded with cooking spices with so much delicacy yet also some serious stuffing as well.
